O KEFIRU I GLJIVAMA KEFIRA

Kefir je najstariji fermentirani mliječni proizvod koji potiče sa Kavkaza. Napitak se može praviti od različitih vrsta mlijeka, ovčijeg, kozjeg ili kravljeg. Potrebno je samo mlijeko i gljive kefira.

U procesu fermentacije kefira nastaju različite aromatske supstance, kao i CO2. Kefir je bogat B vitaminima a takođe sadrži i vitamin E.

Pomaže za cirkulaciju, smanjuje nivo kolesterola i održava zdravu crijevnu mikrofloru.

Za one koji su na makrobiotičkoj ili vegan prehrani, gljive kefira se takođe mogu koristiti za pravljenje napitka od vode umjesto mlijeka. Jedino je potrebno malo više vremena da se gljive transformiraju u kefir kristale. Kada se stavljaju gljive u vodu potrebno je dodati malo šećera i soka limuna.

Prvo nasuti mlijeko u staklenu ili plastičnu posudu. Za pravljenje kefira ja koristim kuhano svježe mlijeko, iako gljivama neće škoditi bilo koja vrsta mlijeka, pasterizirano, nekuhano i sl. Jedino je bitno da se ne koristi mlijeko sa malo masnoće. Najbolje je mlijeko sa 3,2% masnoće.

First pour milk into glass or plastic vessel. You should not use metal vessels. For making Kefir, I am using cooked fresh milk, even every kind of milk is good. Just don't use low fat milk, because kefir cant be made from it. The best is milk with 3,2% fat.

Za cijelu proceduru pravljenja kefira bitno je naglasiti da se ne smije koristiti ništa metalno, ni posuda ni kašika.
