ABOUT KEFIR DRINK AND KEFIR GRAINS

Kefir is the oldest kind of fermented milk product from Kavkaz. It can be made from different kind of milk, from sheep, goat or cow's milk. It needs just milk and kefir grains.

Through fermenting of Kefir drink, different natural aromatic substances are produced and also CO2. Kefir is rich with vitamins of B group, and contains E vitamin too.

It is helping with circulation, decreasing cholesterol and keep healthy intestinal microflora.

For people who are on macrobiotic diet, Kefir grains also can be used with water instead of milk. Just it is needed little more time that grains pass from milk grains to kefir crystals. When putting grains into water, you should add little sugar and little lemon juice.

Fermenting procedure for Kefir drink
  First pour milk into glass or plastic vessel. You should not use metal vessels. For making Kefir, I am using cooked fresh milk, even every kind of milk is good. Just don't use low fat milk, because kefir cant be made from it. The best is milk with 3,2% fat.
 

Add washed Kefir grains to milk with plastic or glass spoon. The bowl should not be from metal, because it can make Kefir grains not to survive.

 

 


Put lid or some plate on top of vessel and leave Kefir grains in milk for 24 hours
Filter Kefir grains through some plastic filter. Again you should be careful not to use anything metal, because Kefir grains should not come in contact with it.
 
Pour Kefir to bowl through filter into any kind of vessel.
By filtering, you get Kefir drink. Pour Kefir in some bottle and leave it in the fridge for some time.
Kefir grains which stayed in plastic filter, wash and prepare for making new Kefir drink.
Kefir grains are growing easily. Every time when you making new drink, you can notice more grains. After some time you have to share grains or to use more milk in preparing of Kefir.

 

Wash grains with cold water. Kefir grains don't need too much work for growing and using. If you don't have enough milk for preparing new Kefir, then put grains in cup with milk just to cover grains and leave it in fridge for 1 or 2 days.

And if you are going to continue with preparing Kefir same day, wash vessel which you are using for soaking grains into milk.

 


Kefir can stay few days in the fridge. Best is 2 to 3 days.
